Non-Dairy No-bake Chocolate Coconut Cookies

I'm currently on a low sugar eating lifestyle, like so many of us (yay!). With that said, I get my sweet cravings sometimes like anyone else! Recently, I have been experimenting with non-dairy and low-sugar dessert options that would offer healthy fats, and I finally came up with a recipe I'm happy with! 

The best part is its an easy peasy no-bake dessert offering healthy fats in the form of coconut oil and almond butter! There is room for experimentation with this recipe as well. I added a bit of cinnamon but you can add a bit of pumpkin spice, ginger, etc. Have fun with it!

Ingredients:

1/2 cup of coconut oil
1 Tablespoon cocoa powder
1/2 cup almond butter
1 tablespoon raw honey or stevia
1 teaspoon cinnamon
1 1/2 cups coconut flakes
1/2 cup coconut flour
dash of sea salt

Method:

Line a plate with parchment paper and set aside.

Heat the coconut oil until liquid form in a large glass bowl

Add cocoa powder, almond butter, raw honey or stevia, cinnamon and sea salt to bowl and stir until well blended. 

Add the coconut flakes to the bowl and stir.  

The coconut powder and coconut flakes are used as a binder and the amount will depend on the consistency of the almond oil you used. Add the coconut flour slowly and stir until well mixed. You have the right consistency when you can spoon the mixture without it being runny or dripping in any way.  

One at a time, add spoonfuls of the mixture to the parchment-lined paper and freeze for 1-hour.  Once they fully solidify they are ready to eat and any left-overs can be refrigerated!
