Lemon Baked Salmon with Creamy Cauliflower and Quinoa

Anyone who knows me well, knows baked or grilled salmon is one of my favorite meals of all time. I actually was on the hunt for the best salmon dish in the world at one point...and I found it! 
The best salmon dish I discovered (minus this recipe of course ;) was in Belgrade, Serbia (random huh?) at a restaurant called Ambar.  True story. 

Ingredients: 
Salmon fillets (1 - 3 fillets)
Lemon pepper seasoning
himalayan salt
1/2 Tsp basil
1 cup Quinoa (Any type will do)
1 fresh lemon

Creamy Cauliflower
5 cups cauliflowers florets or 2 heads of cauliflower
2 Tbsp olive oil
1/2 tsp salt (I use himalayan salt for its faboo health benefits
1/2 tsp dried or fresh basil
1/2 tsp garlic powder

Method: 
Cook quinoa according to directions on the back of the box or bag you purchased.  I add a cube of chicken stock (or  replace 1 cup of water with 1 cup of chicken broth ) for added flavor.  Set aside once done. 

Rinse cauliflower and place in a large pot of water and bring to a boil.  Lower heat and steam cauliflower until tender. Drain and return to pot.  Add olive oil, salt, basil and garlic powder.  Add cauliflower to a blender or food processor and puree until bended.  Should be the consistency of mashed potatoes with no lumps! 

Preheat oven to 450 degrees.  Rinse salmon fillets and lay on baking sheet over tin foil.  
sprinkle lemon pepper, basil and himalayan salt over salmon.  Loosely fold the tin-foil over the fillets. Bake at 450 degrees for 12-15 minutes. Gently remove/scrape the skin off once cooked.  

Layer your plate with quinoa, creamy cauliflower and top with the salmon...or eat separately if you do not like your food to touch. ;) Squeeze some fresh lemon juice over the top and Voila! You have one nourishing dairy free and vitamin packed meal that will leave you full for hours!
