Sweet Potato Maple Bowl


Sweet potatoes are not only a fall treat and can be enjoyed year round in a variety of ways! If you’ve been reading up on and trying to eat in an antinflammatory way, then you’ll want to add sweet potatoes to your grocery list! Sweet potato is a good source of complex carbohydrate, beta-carotene, manganese, vitamin B6 and C as well as dietary fiber. Working together, these nutrients are powerful antioxidants that help to reverse inflammation in the body.



▫️2 sweet potatoes
▫️1 cup nut milk
▫️4 Tablespoons almond butter
▫️1 teaspoon ginger
▫️1 teaspoon cinnamon
▫️1/2 teaspoon sea salt
▫️dried cranberries or fresh blueberries
▫️coconut chips or flakes
▫️maple syrup


▫️prick sweet potatoes all over with fork, and microwave until tender turning ever couple of minutes. About 8-10 minutes total.
▫️cool potatoes and peel. Place peeled potatoes and all ingredients minus the berries and coconut in a blender. Blend until smooth.
▫️serve and top with maple syrup, berries and coconut.
▫️Serves 4. Serve warm, room temp or chilled!
